Sustainable proteins for new value chains

Keeping up with the increasing protein demand, development of new protein sources will be required. Innovative technologies and alternative sustainable protein sources can be part of the solution. The successful introduction or development of these alternative proteins depends on a lot of factors. New protein sources must comply with a number of criteria before they are accepted by the consumer; they must score well for taste and price, keep for a long time, be healthy and appeal to a broad range of potential customers.
