How to formulate with dietary proteins

Consumers have recognized the benefits of protein and the food industry is now challenged to develop tasteful and convenient protein products.  There are several types of proteins, the most common of which originate from meat, dairy and eggs. Other sources include fish and plants. When developing a new product, it is important for the producer to properly determine the purpose of the product and choose the optimal composition based on it.
